Our buckwheat, or 'soba' in Japanese, is grown in the Hida region in central Japan, which offers one of the wildest landscapes in the country. Thanks to the large temperature range between day and night in this region, the buckwheat grains have a softness and an intensity and depth of flavour. They are slowly roasted at a low temperature to draw out their natural sweetness. Buckwheat grains are excellent not only for preparing hot drinks, but also for use in cooking and baking. This infusion, very popular in Japan, is naturally caffeine-free and gluten-free. It promotes good blood circulation and helps to lower blood pressure.
