The Delights of Cold Tea: A Summer Refreshment at Jugetsudo🧊🍃

At Jugetsudo Paris, we know that nothing is more refreshing than a cold tea on hot summer days. Discover our secrets for preparing excellent Japanese cold teas.

Methods for Preparing Cold Teas 🍃

There are three main methods for brewing cold tea: cold brew, ice brew, and quick-chill brew. Each offers a unique and delicious experience.

Cold Brew (Mizudashi) 💧

Classic cold brew involves letting tea leaves steep in cold water for several hours.

  1. Prepare 10g of tea leaves for 1 liter of water.
  2. Leave to infuse in the refrigerator for 3 to 5 hours.

Jugetsudo Recommendation : Try our Sencha for the perfect cold brew. Its sweetness and umami are revealed by this method.

At Jugetsudo we also recommend another Mizudashi method that saves you time. There she is :

Jugetsudo Recommendation : Try our bagged teas, like mecha or genmaicha with this Mizudashi method.

Ice Cube Infusion (Kōridashi) 🧊

Ice brew uses the slow dissolution of ice to extract flavors from the tea.

  1. Place 4g to 8g of tea leaves in a teapot.
  2. Add ice cubes and let melt slowly, ideally overnight in the refrigerator.

Jugetsudo Recommendation : Our Gyokuro is ideal for this method, releasing sweet notes and incomparable richness.

Rapid Cooling Infusion (Kyuurei) 🍵🧊

This method involves preparing a hot tea which is then poured over ice for immediate cooling.

  1. Infuse 4g of tea in 50ml of water at 80°C for 30 seconds.
  2. Add 100ml of water at room temperature for 1 minute.
  3. Pour into a glass with ice cubes.

Jugetsudo Recommendation : Our Genmaicha , with its puffed rice flavors and matcha depth, is ideal for this method, offering a refreshing and distinct flavor.

Cold Teas by Tea Type

Sencha 🍃

For a cold Sencha, we recommend cold brewing to extract all its sweetness and umami, or rapid cooling brewing for a more pronounced, herbaceous flavor.

Gyokuro

Gyokuro is exceptional as an ice cube infusion, gradually releasing its rich sweet and umami flavors.

Hojicha 🍂

For Hōjicha, cold brewing is recommended for a smooth, refreshing tea, while rapid-chilling brews highlight its unique toasted flavors.

Genmaicha 🌾

Genmaicha, a blend of green tea and toasted rice, is delicious as a cold brew or rapid chill, retaining its toasted aromas and sweet notes.

Matcha

Matcha is prepared quickly by adding ice cubes to a traditional preparation for a refreshing and energizing drink.

Opt for our premium Matcha at Jugetsudo for a quick and easy preparation, ideal for hot days.
