Fuji no Haru Matcha – Rich Umami Matcha from Okabe, Shizuoka
This matcha is produced in Okabe, Shizuoka Prefecture, at the foot of Mount Fuji, a landmark featured in the famous 53 Stations of the Tōkaidō series by Hiroshige. The region’s mountainous terrain is shaped by the Asahina River, creating a cool, humid climate ideal for cultivating a tea that is smooth, round, and refreshingly fragrant.
Fuji no Haru Matcha is exceptionally rich in umami due to its cultivation using the Nakashima method. This approach involves carefully analyzing the soil quality and adjusting fertilization accordingly. By providing the tea plants with the right balance of nutrients, the leaves develop a higher concentration of theanine, enhancing their natural umami depth.
With its vibrant green color and pronounced flavor, this matcha can be enjoyed daily in the traditional way or used in cooking and baking to elevate various recipes.
