Le matcha is a very fine powder which easily forms small lumps. This sieve eliminates them before preparation: the powder dissolves better in water.
It is made of stainless steel in Sanjō, in Niigata prefecture, a city with a metallurgical tradition. Its weight makes sifting easier. The metal mesh vibrates as the spatula passes: the matcha passes effortlessly and there is almost no static electricity.
Use
Hold the bamboo spatula straight and press lightly, until you hear the metal mesh. Sieve in circles. The funnel provided allows you to pour the sifted matcha into a tea box (natsume or pulpit) without losing any.
The sifted matcha is fluid: usucha (light tea) gains flavor and koicha (thick tea) mixes more easily. In pastry, the matcha is distributed evenly.
