Hatsumukashi Matcha – Superior Matcha from Okabe, Shizuoka

A fine and elegant mousse, scattered with delicate bubbles like a miniature cosmos in the bowl, followed by the pure, fresh fragrance of young green shoots—this matcha embodies the classic world of matcha, reminiscent of the tea rooms dedicated to the cha-no-yu tea ceremony.

Hatsumukashi surprises with its natural sweetness, which does not immediately reveal itself but gradually unfolds, much like how its texture changes from the first sip to the last. As the tasting progresses, the tea thickens, becoming creamy and velvety. The finish is remarkably smooth—the final drop could almost be a dessert, so rich in flavor and texture.

This superior-grade matcha comes from the Okabe plantations in Shizuoka Prefecture, a region renowned for its gyokuro production. To reduce bitterness caused by catechin development, the tea plants are shaded three weeks before harvest under 90% opaque covers. The leaves are then finely ground using a traditional stone mill.

Okabe, known as “the village of gyokuro,” is one of Japan’s three major tea-producing regions, alongside Uji (Kyoto) and Yame (Kyushu). It benefits from ideal growing conditions—a cool, humid mountain climate, fertile soil, and the pure waters of the Asahina River. This matcha is made from a carefully selected blend of first-harvest leaves from the Saemidori, Samidori, and Asahi tea cultivars.

This high-quality matcha is also suitable for a variety of culinary applications.
