The month of matcha

November, the New Year of tea.

In Japan, the New Year of Tea is not celebrated in January, but in November. Ground with a stone mill, whipped with chasen: discover the matcha, its bright jade color and its intense and creamy flavor, with the utensils that accompany it.

02 · Prepare a matcha

Prepare a bowl of matcha

Water 80°CDosage 2 g of matcha / 50 ml of waterWhisk approx. 10 seconds
01Warm the bowlPour hot water into the bowl to warm it and dip the chasen strands in it to soften them. Drain the water and wipe the bowl with a cloth.
02Dose it matchaTwo heaping spoonfuls of chashaku, approximately 2 g. Sift the powder to avoid lumps: the texture will be smoother.
03Pour the waterApproximately 50 ml of water cooled to 80°C. Water that is too hot accentuates the bitterness: let it cool slightly.
04Whip with chasenWith a movement of the wrist, draw a “ M ” without touching the bottom of the bowl, for around ten seconds. When a fine foam appears, gently remove the chasen from the center.
03 · Utensils

The utensils of the matcha

Bowl with matcha (chawan) The bowl for whipping and tasting the matcha
Depending on the region and the enamel, it changes in appearance and feel.
Learn more +

The shape and thickness of the bowl influence the preparation and the pleasure of tasting. A bowl with a wide opening lets the chasen evolve freely: ideal for beginners.

Raku, Kyo-yaki, Mino-yaki… each region has its own clay and its enamels; we choose our bowl according to the season and the occasion.

Bamboo whisk (chasen) Finely carved from bamboo,
it creates a fine and creamy foam.
Learn more +

Made from a single bamboo stem split into thin strips, each strand is adjusted by hand. The more strands there are, the finer the foam.

Soak it in lukewarm water before use to soften the strands: it will break less and last longer. After use, rinse it with water and let it dry well.

Bamboo spoon (chashaku) The bamboo spoon to measure the matcha
Two heaping spoonfuls make about a bowl.
Learn more +

It is used to take the matcha in its box to place it in the bowl. A spoonful corresponds to approximately 1 g; count two rounded spoonfuls for a bowl of matcha (usucha).

Bamboo fears water: after use, simply wipe it with a dry cloth, without rinsing it.

Chasen support (kusenaoshi) The support for drying the chasen.
It preserves the shape of the strands.
Learn more +

This support accommodates the chasen, strands down, after use; it is also called “kusenaoshi”.

It restores their shape to the strands, which tend to close, while letting them dry: the chasen is protected from humidity and lasts longer.
